Parmesan-Crusted Walleye



  • 2 eggs

  • 1 tablespoon of water

  • 1/2 cup of Italian style bread crumbs

  • 1/2 cup of Panko bread crumbs

  • 1/3 cub of instant mashed potato flakes

  • 1/3 cub of grated Parmesan cheese

  • walleye fillets


  • Preheat oven to 450°

  • Mix bread crumbs, mashed potato flakes, and Parmesan cheese to make breading.

  • Scramble 2 eggs with water to create the egg wash.  Coat fillets completely.

  • Place fillets into breading and cover completely.  Don't be afraid to press breading into fillet.

  • Cover baking sheet with non-stick cooking spray.  Place fillets on baking sheet and sprinkle extra Parmesan on top of fillet.

  • Place in oven and bake until Parmesan cheese is golden brown. (Fillets pictured above were on the larger size and cooked for 20 minutes).
